Flæskesteg- Danish Pork Roast With Crackling
3 Winks Design brings you this traditional Danish recipe as part of their ancestral recipes series. The roast is easy, and has big flavorful results. Everyone will be fighting for a piece of crackling when this roast comes out of the oven. Enjoy!

2 - 3 lb pork loin or shoulder roast with the skin
2 tbs kosher salt
1Preheat oven to 350 F
2After removing excess moisture from the roast, cut the skin into about 1/4-1/2 inch strips. Cut deep grooves but don't cut down to the actual meat.
3Generously apply the salt to the top of the skin and especially in the grooves that were just cut.
4Place in a baking dish with sides to catch the drippings. Bake for 3 hours or until the internal temperature reaches 165F.
5If the top isn't crunchy and brown, place it under the broiler for a few minutes.
6Serve with boiled potatoes, and gravy made from the drippings. Enjoy!
