Main Ingredients

4 medium flour tortillas (or gluten free tortillas)

1 Small onion, sliced into thin rings

1 tbsp olive oil

1/4 cup homemade fig jam, (recipe below) or store bought

1/2 cup cashews, soaked

1 Small clove garlic

1 tsp vinegar

1/4 - 1/2 tsp salt

1/4 tsp or less of cayenne pepper, depending on your spicy preference

1/2 cup water + more to get the blade going, one tablespoon at a time

Fig Jam

1/2 cup diced figs

1/2 cup water

1/4 cup maple syrup

Preparation

1If you are making homemade fig jam, combine all ingredients in a small pot over low heat. Simmer until figs are soft. Blend in a food processor or blender until smooth. Set aside to cool.

2Slice onions and sauté in olive oil over medium heat until very soft and caramelized.

3While the onions are cooking, prepare the cashew cream. Add cashews, garlic, cayenne, salt, and water in a blender and blend on high until smooth and creamy.

4Heat a frying pan over medium heat. On one tortilla, layer half the cashew cream and onions. On another tortilla, spread a thick layer of fig jam. Put the two tortillas together and place on the heated frying pan. Cook on one side for 3-4 minutes or until brown. Flip to the other side and cook for another 3-4 minutes.

5Repeat with remaining two tortillas. Slice and serve warm!
