This is quite a muey caliente version of Guacamole, although not nearly as hot as you would be served in Mexico!

2 ripe avocados, peeled and pitted
2 tomatoes, peeled seeded and finely chopped
6 scallions, finely chopped
1 - 2 fresh chiles, seeded and finely chopped
2 tablespoons fresh lime juice (more or less to taste)
1 tablespoon chopped cilantro (more or less to taste)
salt and freshly ground black pepper
cilantro sprigs for garnish
1Put the avocado halves in a large bowl and mash them roughly with a large fork.
2Add the remaining ingredients. Mix well and season with salt and pepper.
3Serve garnished with cilantro sprigs, and alongside your favorite tortilla chips (I prefer blue corn tortillas).
