Main Ingredients

2 1/4 cup warm water (110 degrees-warm to the touch)

1 1/2 teaspoons active dry yeast

6 cups unbleached all purpose flour (can also use 3 cups whole wheat and 3 cups unbleached all purpose flour)

1/2 tbsp salt

2 tbsp sugar

4 tablespoons butter, softened

olive oil for coating dough

Preparation

1Combine water and yeast in a large bowl (I use the bowl of my kitchen aid mixer). Let stand for 5 minutes until foamy.

2Add in salt, sugar, and butter.

3Gradually add in enough flour to make a ragged dough. You may not use all 6 cups flour, I typically did. Knead dough for 5 minutes until elastic and no longer sticky (I use my kitchen aid mixer with the dough hook attached and usually stop it around 3 1/2 minutes). If the dough is still sticky, add a little more flour.

4Coat large bowl with olive oil and transfer dough to bowl. Cover with plastic wrap and let rise for 1 1/2 to 2 1/2 hours.

5To bake, melt butter in a rimmed baking sheet or two cast iron skillets. Add favorite toppings and bake at 400 degrees for 30-45 minutes. (Martha suggests 500 degrees but I was afraid my oven couldn't handle that!).
