Ezekiel Tortilla Pizza

Preheat oven to 450°F. In a large nonstick skillet, heat 1 teaspoon of oil over medium heat. Add spinach, and cook until wilted, 2 to 3 minutes. Main Ingredients

1 ezekiel tortillas (150 calories)

3 oz low sodium chicken stock (chopped and cooked)

2 tsp extr virgin olive oil (divided)

1 cup fresh spinach (packed)

1/2 cup bell pepper chopped (green, red, orange or yellow)

1/4 cup low sodium tomato paste

sea salt and black pepper to taste

2 tbsp reduced fat fetta cheese crumbled (or)

2 tbsp parmesan cheese

Preparation

1Preheat oven to 450°F.

2In a large nonstick skillet, heat 1 teaspoon of oil over medium heat. Add spinach, and cook until wilted, 2 to 3 minutes.

3Brush inside of each Ezekiel tortilla with 1 teaspoon oil. Place Ezekiel tortilla, oiled side up, on a large baking sheet and bake until starting to brown, about 5 minutes. Remove from the oven.

4Layer sauce, spinach, bell peppers and chicken evenly on Ezekiel tortilla. Sprinkle with sea salt and pepper, return to the oven, and bake 8 to 10 minutes. Sprinkle with cheese and continue baking until cheese has softened, about 2 minutes more. Serve warm.
