Main Ingredients

1/2 box dried angel hair pasta (i used dececco brand)

4 oz. humboldt fog goat cheese, cut into 1- inch pieces

2 cups baby spinach (or more)

1 cup fresh parsley, chopped

1 cup fresh cilantro leaves, chopped


toasted walnuts, or pine nuts, if you happen to have them


1Bring a large pot of salted water to boil and add pasta; cook according to package directions. Drain pasta, reserving 1 cup of pasta water.

2Return pasta to pot and add remaining ingredients, including lemon zest and juice. Toss until well combined, adding pasta water as needed to loosen the pasta. Add salt and pepper to your liking. Sprinkle with toasted nuts.

Additional Notes

Best served with a fresh green salad and smoky-lemon salmon filet grilled by your partner! Oh, and a glass of white wine.
