Everyday Sheetpan Veggie Nachos With Spicy Yogurt Sauce

1 Bag tortilla chips
2 cups black beans (1 can, drained and rinsed)
3 green peppers, diced
2 onions, diced
1 Small zucchini, diced
12 oz shredded sharp cheddar cheese
2 tomatoes, diced
1 Small bunch cilantro
1 cup plain greek yogurt
2 - 4 tablespoons hot sauce (i use sriracha or taco sauce)
1/2 teaspoon garlic powder
1Preheat oven to 400 degrees Fahrenheit.
2Heat 2 tablespoons olive oil in a skillet over medium heat. Add 2 of the diced peppers, 1 1/2 of the diced onion, and whole diced zucchini to the skillet. Saute for about 5-6 minutes. Reserve remaining onion and pepper.
3Spread tortilla chips onto a rimmed sheet pan. Top with 2 cups black beans and all of sauteed veggies. Top with cheese and pop into oven. Bake for about 15-20 minutes, until cheese is bubbly.
4Mix together diced tomatoes with remaining diced pepper and onion. In a separate bowl, mix together yogurt with hot sauce, garlic powder, cilantro, and a little salt.
5Remove nachos from oven and top with diced tomato mixture and drizzle with yogurt sauce.
