Ethan's Egg-cellent Frittata
Ethan and I wrote this recipe together adding in all of his favorite ingredients.

12 large eggs
1/2 small onion
3 tbsp butter
1/2 lb . sausage (italian or breakfast)
1 cup shredded potatoes (could used diced)
1/2 cup carrots (shredded)
1 cup spinach (chopped)
2 tbsp full fat coconut milk
3/4 tsp salt
1/4 tsp pepper
1Preheat oven to broil.
2Add 2 tbs butter and onion to a 12 inch cast iron pan. Cook on medium heat until onions are soft.
3Add sausage and brown.
4While sausage is browning, whisk the eggs, coconut milk and salt and pepper together.
5Add potatoes (we used 1 cup of organic frozen hashbrowns). Cook until potatoes are soft.
6Add the last tbls of butter and then add the egg mixture and cook on stovetop until the eggs are set around the sides and bottom (around 5 minutes).
7Add optional cheese to the top (leave off for Paleo or Whole30) and broil for 3-5 minutes or until the top is set and brown.
8Let set for at least 10 minutes and then slice it up and ENJOY!
This is a great meal prep idea if you are on the Whole30 and are rushed in the morning. Lots of protein and fat to keep you full and you can reheat for days.
