Main Ingredients

1 tsp ghee

2 aggs

1 handful arugula

1/2 avocado

1 cup slices mixed baby potatoes

1 tbsp olive oil

seasonings of choice: salt, pepper, rosemary, garlic, thyme


1Preheat oven to 400 degrees F

2Toss potatoes in olive oil & season

3Place on baking sheet and bake for 20-30 minutes until golden brown & soft

4Broil for a few minutes after baking if you want crispy potatoes

5While potatoes are in oven Heat Ghee in pan

6Crack both eggs into pan and cook each side for 2-3 minutes **or until done to your liking

7Slice avocado and place on plate with arugula
