Main Ingredients


3/4 cup ricotta cheese

1 cup mozzarella cheese

3/4 cup chopped zucchini

1 egg 1 garlic clove, minced

salt and pepper to taste

1 cup tomato sauce


1Preheat oven to 400 degrees Fahrenheit.

2Take the sliced eggplant pieces and place onto a greased pan and bake for 10 minutes.

3Reduce oven temperature to 350 degrees.

4Make the cheese mixture by mixing ricotta cheese, 1/2 cup of the mozzarella, zucchini, egg, garlic and spices.

5Take a 9x13 pan and pour 1/2 of the tomato sauce into the bottom of the pan.

6Spoon cheese mixture generously into the ends of the eggplant and roll, placing them end down into the pan.

7Cover with remaining tomato sauce and the remaining cheese.

8Bake covered with tinfoil for 45 minutes, remove foil and bake for an additional 15 minutes.

9Let cool and serve.
