Egg In The Hole Sandwiches

These egg in the hole sandwiches get an upgrade with toasted sourdough bread, fresh tomatoes, ripe avocados and tender baby spinach.

Main Ingredients

2 tablespoons mayonnaise

1 tablespoon butter or margarine

2 eggs

salt & pepper

2 slices of your favorite sourdough bread

slices of fresh tomato, avocado and baby spinach leaves

bacon, optional

Preparation

1Using a round cookie cutter or the rim of a sturdy drinking glass, carefully cut a hole out from the middle of each slice of bread.

2Melt 2 tablespoons of butter or margarine in a frying pan over medium-low heat.

3Add the bread slices and toast over low-medium heat until lightly browned on one side. Flip the bread and crack the eggs carefully into the hole of each slice. Continue to toast over low-medium heat until the bread is toasted on both sides and the egg is set to your liking.

4Remove from the pan and spread each slice with mayo. Add fresh tomato, avocado and spinach leaves, and optional bacon.

Additional Notes

The great thing about this sandwich is you can spice it up so many ways, using a pinch of cayenne, or a dash of seasoning such as "everything but the bagel". Swap out the spinach for sprouts, add roasted red pepper, melt some cheese...or add it all, why not?
