Main Ingredients

500 g brown rice/semolina pasta

2 cups around, veggie pasta sauce (eyeball and adjust to preference)

smoked tofu

6 cloves garlic

salt and pepper to taste

2 tbsp nutritional yeast

1.5 - 2 cups veggies of choice (broccoli or mushrooms)

zengarry veg herbs and garlic cheese (cashew based artisan cheese)

dried or fresh basil to taste

dried oregano (1 tsp, optional)

chilli flakes (optional)

Preparation

1First, bring your water in a pot to boil and cut up your veggies and garlic in the mean time.

2Then, if using broccoli, stir it or steam it to soften a little or cook your mushrooms and garlic together. Set veggies aside in a different container/plate.

3When the water's ready, add in pasta and cook according to package instructions and pan grill your tofu.

4Then, add the pasta sauce to the pan with the tofu, garlic and let cook. Then, add seasonings, mix well, adjust to taste, and then add in veggies.

5After sauce is perfect, add in drained pasta. Mix well, then add 2-3 tsp cheese and mix well. Add fresh herbs.
