Easy Refrigerator Greens Omelette

What a great way to repurpose those left over veggie scraps in your fridge!

Main Ingredients

2 4 eggs/ or egg whites for an egg white omelette, scrambled raw

2 cups fresh spinach

1/2 small onion, sliced thin

1 green onion, chopped (just the green stem)

1 small tomato, chopped

handful of your favorite fresh herbs, chopped

sea salt and fresh ground pepper, to taste

cooking spray

1/4 cup *optional: goat cheese or feta

Preparation

1In a small skillet on med/high heat, spray pan with cooking spray.

2Add in spinach and onions sautéing for approximately 2 minutes or until spinach has wilted and onions are just translucent.

3Spread out the spinach and onion sauté evenly to coat the surface of the skillet.

4Add in eggs to evenly distribute over the spinach and onion sauté to also coat the surface of the skillet.

5Turn heat down to low/med heat.

6With a spatula, gently push in the edges of the cooking egg mix to allow remaining raw egg to contact the skillet surface to cook.

7Once egg just sets in the skillet after approximately 2-3minutes, add in remaining veggies and sea salt and pepper to one half side of the set egg mixture.

8Once remaining ingredients are added, fold the empty side of the set egg mixture over, completely covering ingredients, exposing half of the skillet.

9Turn heat off and allow omelette to set in the skillet for 2 additional minutes.

10Place omelette on plate and serve!

Additional Notes

Feel free to add and/or omit your favorite left over veggies and protein on hand from your fridge! *NOTE: If adding animal protein, please be sure to cook completely before adding to your omelette.
