Easy Peasy Beef And Brussels Stir Fry
A simple and wholesome recipe to cook in a flash for the meat eaters in your family.

1 pound thin flank steak or tenderloin
1 pound brussels sprouts
1 package slices mushrooms
1 tablespoon coconut oil
Stir Fry Sauce
1/2 cup low sodium or gluten free soy sauce
1/2 cup low sodium beef stock
2 - 3 tablespoons cornstarch
1 tablespoon sesame oil
3 tablespoons honey
1 teaspoon pepper
1 teaspoon red pepper flakes
1 teaspoon fresh grated ginger
2 cloves garlic
toasted sesame seeds
1Place the coconut oil into a wok or sauté pan and heat to a medium/high heat.
2While the pan is heating chop your Brussels sprouts into halves and toss them into the sauté pan.
3Sauté the Brusssels sprouts with the mushrooms until they are softened and lightly browned
4Put all of the Stir Fry Sauce ingredients in a jar and shake until everything is combined.
5Pour the sauce over the vegetables and simmer for 1-2 minutes.
6While the vegetables are simmering, slice your steak into thin strips.
7Add the thin steak strips in to the pan with the veggies.
8Simmer until the steak is cooked through to your liking.
9Serve over brown rice or quinoa.
10Garnish with green onion, sriracha, and toasted sesame seeds.
Start with 2 tablespoons of corn starch and adjust the amount to thicken the sauce.
