Main Ingredients

3/4 cup quick cooking oats (or oat flour)

1/2 cup brown rice flour

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1/2 tsp cinnamon

1 egg, lightly beaten

1 cup full fat coconut milk (canned)

2 tbsp maple syrup

1 tsp vanilla extract

Preparation

1Begin by preheating waffle iron.

2In a large glass bowl, mix dry ingredients (oats or oat flour through cinnamon). Whisk to combine. Set aside.

3In a medium bowl, mix wet ingredients together (egg through vanilla). Whisk to combine.

4Pour wet ingredients into dry ingredients. Whisk to combine.

5Grease waffle iron with coconut oil before and between batches!

6Scoop batter into waffle iron and cook until desired degree of doneness (I used a but less than 1/3 cup. The batter spreads, so keep that in mind)
