Easy Grilled Pineapple Guacamole
This refreshing take on my all-time favorite condiment is bursting with summer flavor. The grilled pineapple adds a smoky sweetness that is stellar on burgers or tacos. Of course, you could keep it simple with some plantain or tortilla chips.

3 large avocados
1 c. diced grilled pineapple (see note below)
1/2 c. chopped cilantro
1/4 c. finely diced red onion
juice of one lime
salt to taste
1Remove seeds from avocados, scoop out fruit (yes, avocados are fruits) into medium bowl, and mash with fork until desired consistency.
2Add cilantro, red onion, and lime to avocado and mix to combine. Gently fold in the pineapple.
3Add salt to taste. Serve with chips, burgers, or wherever your imagination takes you.
To grill pineapple, cut pineapple into rings with core removed. Heat grill to medium heat. Brush or spray pineapple rings with coconut oil before grilling to prevent sticking. Grill 2-3 minutes per side. Leftovers make for a wonderful dessert with ice cream, gelato, or sorbet. You could easily add hot sauce or diced jalapeño if you want to add some heat.
