Easy Baked Mac And Cheese
Here is my easy go-to recipe for baked mac and cheese! It is bursting with flavor, crispy on the outside, and cheesy on the inside.

2 cups of macaroni noodles
1 tbsp butter
1 tbsp all purpose flour
1 - 1/2 cups half and half
1/2 cup shredded cheddar cheese (plus 1/4 cup for topping)
1/2 cup shredded queso quesadilla cheese (plus 1/4 cup for topping)
1/2 tsp salt (or salt to taste)
1/2 tsp garlic powder
1/4 tsp spanish paprika
1/4 tsp dry basil
1/4 tsp freshly grounded nutmeg
1/8 tsp black pepper
1/3 cup panko breadcrumbs
1Preheat oven to 400 degrees.
2Then in a large pot on high heat, boil salted water. The water should taste close to the ocean.
3Add in the macaroni noodles and cook for 10 minutes, or until fork tender.
4Meanwhile, in another pot, on medium heat melt butter. Once butter has melted, add in the flour.
5Stir butter and flour together until it resembles a golden paste. While continuously string, let the paste cook for 2 minutes to cook off the raw edges of the flour.
6Next slowly pour in 1 cup of half and half, while whisking ingredients together to make sure no clumps form.
7Let the sauce cook for another 2-3 minutes until it is nice and creamy.
8Add in 1/2 cup cheddar cheese, and stir.
9Add in 1/2 cup queso quesadilla cheese, and stir. Make sure to continuously whisk sauce while adding the cheese to prevent cheese clumps.
10Next season sauce with salt, garlic powder, spanish paprika, dry basil, and nutmeg. Mix well.
11By this time the macaroni noodles should be ready to drain.
12Drain macaroni noodles, and in the same pot pour in the cheese sauce. Make sure every noodle is covered in sauce.
13Add macaroni to a baking dish, and using the back of your spoon or spatula, smooth out the macaroni. Make sure the top layer is nice and flat.
14Next sprinkle on 1/4 cup of shredded cheddar and queso quesadilla cheese.
15Then evenly add on panko breadcrumbs, making sure all the noodles are covered by cheese and breadcrumbs.
16Season cheese and breadcrumb layer with a sprinkle (1/8 tsp) of salt, garlic powder, dry basil, spanish paprika, and black pepper.
17Place in oven and bake for 25 minutes until golden brown and crispy.
18Let macaroni sit for 3-5 minutes before serving, and enjoy!
