Earl Grey Blueberry Granola
The most delicious granola I've ever made! Recipe makes about 4 cups. Vegan, gluten free, and soy free.

1 cup almonds
1 cup buckwheat groats (bobs red mill brand is great)
2 cups gluten free rolled oats
1 - 2 earl grey teabags, depending on your preference
1/4 cup organic brown sugar
1/3 cup maple syrup
1/2 cup melted coconut oil
3/4 cup dried blueberries
1Preheat oven to 325F
2In a blender or food processor, process almonds until lightly ground, but don't let them get as thin as almond meal.
3In a large bowl, mix all dry ingredients (including the tea from the teabags). Do not include blueberries at this time.
4In a small bowl, mix maple syrup and coconut oil.
5Add liquid ingredients to the dry ingredients and stir until combined.
6Line a baking sheet with parchment paper or lightly grease. Spread the granola onto the baking sheet. Depending on the size, you may need to use two baking sheets.
7Place in the oven and bake for 20-25 minutes, Stir halfway through.
8Let cool for a few minutes and place in airtight container for storage. Mix in the dried blueberries before serving.
