Dutch Corn Bread

375 g all purpose flour
75 g white or yellow cornmeal flour
1 package dry yeast
6 g sea salt
10 g white sugar
275 ml warm water (110 f / 45 c)
30 ml extra virgin olive oil
1Whisk together yeast, sugar, and water in a mixing bowl.
2Let sit 10 minutes.
3Add AP flour, cornmeal flour, salt, and EVO to mixing bowl and mix to combine.
4Cover bowl with a plate and let sit until dough has doubled in volume.
5Punch dough down and knead with flour until it easily forms a ball.
6Cover bowl and let sit until dough has again increased in volume.
7Oil a standard bread loaf pan and bake at 225 C for 30 - 40 minutes or until bread sounds hollow.
