Double Chocolate Cranberry Bites

1 cup old-fashioned oats

3 tablespoons nut butter of choice (we used pb)

1 tablespoon cocoa powder

1 - 2 tablespoons maple syrup (adjust as desired)

1/4 cup raw pumpkin seeds

1/4 cup dried cranberries

1/2 cup chocolate (chips or chopped)

a bit of non-dairy milk


1Add the ingredients in one by one, mixing after each addition with either your hands or a rubber spatula.

2The mixture may seem dry. No problem! Stir in 1 tablespoon of non-dairy milk at a time until it reaches a sticky consistency. You want to be able to squeeze the mixture in your hands without it crumbling. The milk also helps keep the bites moist while being stored.

3Roll the mixture into balls, place in an airtight container, and let them sit in the fridge for at least 30 minutes before enjoying!
