Dark Chocolate-dipped Apricots {paleo, Vegan, Whole 30}

When you just need a clean treat but want to put 0 effort into the process, this is the dessert for you! With just 4-5 ingredients, a microwave, and about 5 minutes of work, you'll have dozens of healthy, wholesome bites that look way more impressive than the effort requires. Plus, they're super versatile. Substitute any dried fruit or toppings for an entertaining-worthy treat!

Main Ingredients

1/2 cup dark chocolate chips, chunks, or bars broken into pieces (use 70% cacao or higher)

1 teaspoon coconut oil

24 dried apricots (or figs, pineapple rings, mango slices, your favorite dried fruit)

garnishes such as chopped hazelnuts, roasted pistachios, shredded coconut, lemon zest, sea salt

Preparation

1Melt dark chocolate and coconut oil for 30 second increments in the microwave until the chocolate is smooth and glossy. Stir between heatings. This should take about 3-4 rounds of microwaving.

2Dip apricots into melted dark chocolate, then dunk chocolate-coated portion into whatever topping you desire. Here are three of my favorite variations:

3-lemon zest and chopped roasted hazelnuts

4-salted pistachios

5-shredded and chopped coconut chips

6Arrange on a parchment-lined baking dish or sheet. Chill until ready to devour. These will last 2 weeks in an airtight container refrigerated but can be frozen for up to 3 months.
