Cake Mix:

1 cup fine almond flour

1/4 c unsweetened cocoa powder

3 tbsp coconut flour (or all purpose or oat flour)

1/3 c to 1/2 c creamy no stir almond butter

1/3 cup maple syrup (slightly adjust to taste)

1/4 to 1/2 tsp almond extract

1 tsp vanilla

pinch of pink or sea salt

Dark Chocolate Coating:

3/4 cup dark chocolate chips (enjoy life foods)

1 tbsp coconut oil

Garnish:

dried rose buds

coconut sugar

Preparation

1In a mixing bowl, add in your almond flour and coconut flour and cocoa powder. Mix well until even.

2Add your almond butter, almond extract, vanilla and salt and stir. Then, start to add in your maple syrup a little at time, mixing to form a dough like batter. Taste and adjust sweetness here.

3After this, use your hand to mix a bit to form a not too runny not too thick batter.

4Take a tray and line with parchment paper and start to roll the batter into small balls and place back on the tray. Refrigerate for 15-20 mins.

5In the mean time, melt the dark chocolate chips with coconut oil in the microwave. Cook 3x at 30 second intervals, mixing at each interval.

6Once melted, bring cake bites out and using a spoon or fork, gently lift each ball, dip into the melted chocolate and coat them. Place them back on the tray and repeat for all.

7When done, refrigerate for about 30-40 mins or freeze them for a shorter amount of time.

8When done, sprinkle with crushed dried rose buds and coconut sugar, if desired.

Additional Notes

If batter is too runny, add more almond flour. If the batter is too dry, add more maple syrup or nut butter.
