Main Ingredients

1 cup full-fat coconut milk

1 medium avocado

1 teaspoon vanilla extract

1 - 1/2 teaspoons peppermint extract, to taste (you don't need a lot of this as it's super concentrated)

1 teaspoon lemon juice, freshly squeezed

pinch sea salt or salt of choice

4 - 6 tablespoons monk fruit sweetener, to taste (i used 4)

1 - 1.5 ounces (30g- 45g) sugar-free chocolate chips or chopped chocolate bar (90% cacao recommended, at least 70%) or cacao nibs chopped

Preparation

1If the liquids and solids have separated in the coconut milk can, be sure to stir until well combined.

2Add coconut milk, avocado, vanilla extract, peppermint extract, lemon juice, salt and sweetener to a blender (I used a magic bullet and it worked fine!) and blend until creamy smooth. Adjust sweetness and minty-ness to taste.

3Place in a sealable container (or fat bomb moulds :D) and freeze until set, about 2 hours (less for the mini bombs). If freezing overnight, leave out at room temp for 10-20 mins before enjoying.
