Curried Lentil And Kale Hummus

1 cup cooked brown lentils
1/2 cup walnuts
1/2 red onion, chopped
2 cups organic kale, stems removed and lightly massaged (i know this is strange but trust me, it makes a difference!)
1 1/2 tsp curry powder
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1 cup water
1Begin by cooking your lentils and letting them cool. Make sure that you're using 1 cup of cooked lentils (about 2/3 cup uncooked) and not 1 cup of uncooked lentils.
2Add all ingredients to a food processor or high powered blender. Blend on high for 2-3 minutes or until smooth and creamy. The result should be a consistency like hummus.
3Serve chilled with fresh vegetables, crackers, or baguette slices.
