Cucumber Lime Agua Fresca

This recipe utilizes large cucumbers from the garden that would otherwise be inedible and turns them into a delicious and refreshing summer drink.

Main Ingredients

8 cups peeled and diced cucumbers (about 4 extra large)

4 cups water

1/4 cup lime juice

simple syrup to taste


1Peel and dice the 4 or 5 large cucumbers until you have 8 cups of cucumber pieces.

2Place the cucumbers in a high powered blender with the 4 cups of water and the 1/4 cup of lime juice.

3Blend the cucumber until smooth and frothy.

4Pour the cucumber slurry through a fine mesh strainer and use the back of a spoon to extract as much liquid out of the pulp as possible.

5Pour the final liquid into a pitcher and flavor to taste with simple syrup depending on how sweet you like your agua fresca. I recommend 1/2 to 3/4 cup of syrup.

6Serve chilled or over ice with a lime wedge and a mint sprig.
