Crustless Sausage And Veggie Quiche

Main Ingredients

1/2 c chopped onion

1/4 c chopped bell pepper, any color

3 chopped stalks asparagus

1/2 c. chopped broccoli

2 t butter

12 oz. pork breakfast sausage

6 large eggs

2 c sour cream

1 c milk

1 tsp. salt

1/4 tsp. pepper

1 tsp. prepared mustard

2 c grated mozzarella or montery jack cheese

1 tsp. baking powder


1Grease a 9 x 13 glass pan and set aside.

2Preheat the oven to 400 degrees Fahrenheit.

3Chop up the vegetables in to small pieces and saute in the butter until soft. Spread the veggies in the bottom of the greased pan.

4Brown the sausage and then spread it over the veggies.

5Beat the eggs and beat in the sour cream, milk, mustard, sour cream and baking powder until smooth. Fold in the grated cheese.

6Pour the egg mixture over the veggies and sausage. Gently fold together slightly to mix everything together into the egg mixture while keeping the vegetables and sausage fairly even throughout.

7Bake in the oven for 45 min, until set. Serve!

Additional Notes

Cottage cheese could replace the sour cream. Bacon or ham could replace the sausage.
