Cheesy Crustless Quiche Cups - Now Say That 10 Times Fast
This recipe takes about 30 minutes total, and you'll have on-the-go breakfasts to last you about a week. Doesn't get much simpler than that.

1 cup cremini mushrooms
1 cup yellow bell pepper
1 cup shredded cheddar cheese
8 eggs 1 tsp dried basil
1/4 tsp dried oregano
1/2 tsp onion powder
1/2 tsp sea salt
1 tbsp chives
1Preheat the oven to 350 degrees. Grease a 12-cup muffin pan.
2In a large bowl, combine bell peppers, mushrooms, cheese, basil, oregano, onion powder, and salt.
3In a medium bowl, whisk the eggs. Pour into the veg mixture and mix thoroughly. Divide the mixture evenly among the muffin cups and top with chives.
4Bake for 30 minutes or until a wooden pick inserted in the center of a muffin comes out clean.
