Main Ingredients

for curry chickpeas:

2 cans chickpeas, drained and rinsed

1 tbs olive oil

1/2 tsp sea salt

2 - 4 tbs curry, to taste

for salt and vinegar chickpeas:

2 cans chickpeas, drained and rinsed

3 cups white vinegar

1 tbs olive oil

1 tbs himalayan or sea salt

1Preheat oven to 350 degrees.

2For curry chickpeas:

3Drain and rinse the chickpeas. Lay out on a clean towel to dry. If you are pressed for time you can roll them gently between paper towels but this will result in a less crunchy snack.

4Once they are dry to the touch, place in a bowl and mix with olive oil, salt, and curry seasoning of your choice. You can use any seasonings you would like but be mindful of things that typically burn (like garlic and dried herbs). If you want to use garlic, add it at the end to prevent burning.

6Place the chickpeas in a pot with the vinegar and bring to a boil. Once boiling, turn off the heat and let the beans sit in the vinegar for 30 minutes. Once done, drain and lay out on towels to dry just like the instructions above.

7Once dry to the touch, place in a bowl and mix with olive oil and salt.

8Spread evenly on a baking sheet and bake for 20-30 minutes, stirring every 10 minutes to ensure even cooking. When they have a nice golden color and are a little crispy on the outside, turn the oven off (with the chickpeas still inside) and let the oven cool (usually 45-60 minutes). As the temperature comes down, the chickpeas will dry out completely from the heat without burning or cooking any further.

9Once they are cool, store in an airtight container for up to 10 days (if they even last that long!).
