Crockpot Pumpkin Chicken Chili

1 yellow onion, diced
2 red or orange bell peppers, chopped
15 oz can pumpkin puree
1 lb shredded, cooked chicken
15 oz can kidney beans
15 oz can cannellini beans
15 oz can black beans
14 oz can chicken broth
14 oz can petite diced tomatoes
1 tbsp pumpkin pie spice
1/2 tbsp garlic powder
4 tbsp brown sugar
1/2 tbsp ground cumin
1 tbsp chili powder
1 1/2 cups water
1Heat olive oil in a skillet over medium heat. Once hot, add the onion and peppers. Cook, stirring frequently until the onions have become slightly transparent and browned on the edges. Remove from heat.
2Spray crockpot with nonstick spray. Add the cooked onions and peppers and remaining ingredients. Stir well. Cook on low for 3-4 hours or until it is hot all the way through and the beans have softened.
