Crockpot Cheeseburger Soup

Dice potatoes (should come out to about 3 cups). Dice onion and chop celery. Add potatoes, onion, celery, basil, parsley and broth to crockpot. Cook on low 7-8 hours, or on high 3-4 hours. About 30 minutes before serving, add oil and ground beef to a large skillet and brown the beef, then add to crockpot. Main Ingredients

2 large potatoes

1/2 large onion

1 stalk celery

1 tbsp. dried basil

1 tsp. rosemary

3 cups low sodium beef broth

1 lb . ground beef

1/2 tbsp. olive oil

2 tbsp. unsalted butter

1/8 cup cornstarch

1 1/2 cups nonfat milk

1/2 tsp. kosher salt

1 tsp. garlic powder

1/2 tsp. black pepper

1/4 cup nonfat greek yogurt

2 cups shredded reduced fat cheddar cheese

Preparation

1Dice potatoes (should come out to about 3 cups). Dice onion and chop celery.

3About 30 minutes before serving, add oil and ground beef to a large skillet and brown the beef, then add to crockpot.

5Slowly whisk in milk until mixture thickens. Stir in salt, garlic powder, pepper and yogurt.

6Add milk mixture and cheese to crockpot and stir to combine all ingredients.

7Serve and enjoy!
