Crockpot Apple Pork Roast

Core and cut apples into 8 wedges each and throw them into a bowl. Squeeze lemon juice over the top and toss the apples with the lemon juice. Main Ingredients

2 apples

juice of one lemon

6 pound pork roast

1/2 tsp. kosher salt

1/2 tsp. black pepper

1 tbsp. minced garlic

16 oz bag baby carrots

1 tbsp. dried rosemary

1 tbsp. honey

1 tbsp. balsamic vinegar

Preparation

1Core and cut apples into 8 wedges each and throw them into a bowl. Squeeze lemon juice over the top and toss the apples with the lemon juice.

2Place 6 apple wedges and 1/2 Tbsp. of the minced garlic at bottom of crockpot, then gently place roast on top.

3Rub salt, pepper and remaining garlic on roast.

4Add carrots and remaining apples to fill crockpot.

5Sprinkle rosemary over the top. Mix honey and balsamic vinegar together, then pour over roast.

6Cover (my lid just barely fit, depending on the shape of your roast, may be necessary to cover the crockpot with aluminum foil) and cook on low 7-8 hours.
