Creamy Garlic Shrimp
This recipe is unbelievably flavorful and so easy!

3 tablespoons olive oil
1 - 1/2 pounds shrimp, tails off
salt and pepper, to taste
2 tablespoons unsalted butter
6 cloves garlic minced
1/2 cup dry white wine or chicken broth
1 cup half & half
4 ounces cream cheese
3/4 cup freshly grated parmesan cheese plus a little more for garnish
2 tablespoons chopped parsley plus a little more for garnish
1Heat oil a large skillet over medium-high heat. Season shrimp with salt and pepper and sauté for 1-2 minutes on each side, until just cooked through and pink. Transfer to a bowl and set aside.
2Melt the butter in the same skillet. Sauté garlic until fragrant (about 30 seconds). Pour in the white wine or broth and allow to reduce to half while scraping any browned bits from the bottom of the pan.
3Reduce heat to medium, add the half & half and cream cheese and bring to a gentle simmer, stirring occasionally, until the cream cheese has melted and the mixture begins to thicken slightly. Season with salt and freshly ground pepper.
4Add the grated parmesan cheese and allow sauce to gently simmer for a minute or so more until the cheese melts and sauce thickens.
5Add the shrimp back into the pan, sprinkle with parsley. Taste test sauce and adjust salt and pepper, if needed.
6Serve over pasta, rice, zucchini noodles or the grain of your choice.
