Creamy Broccoli Casserole
This is a recipe I came up with for a thanksgiving menu we offered. We got great feedback on it and I thought it would make a good addition to our online cookbook.

1 pound fresh broccoli
1 cup mayo
1 cup sharp cheddar
1 teaspoon salt
4 crimini mushrooms, chopped
4 ounces cream cheese, softened
1 cup milk
2 each eggs, lightly beaten
2 cups ritz crackers or rice krispies, crushed
2 tablespoons butter, melted
1Chop stems off broccoli leaving only the florets
2Rinse broccoli and set aside
3in a bowl combine mayo, cheese, eggs and salt. Mix well.
4In a mixer, combine cream cheese, milk and mushrooms. Beat until smooth and slightly runny.
5Combine all ingredients together and mix until all is incorporated evenly.
6Transfer to a casserole dish sprinkle a little more cheddar cheese on top.
7in another bowl, combine crackers and butter and mix.
8Spread cracker mixture on top of casserole and bake on 400 degrees for 20 minutes or until you can poke the center with a tooth pick and it comes out clean.
