Cream Of Broccoli Soup

3 large heads broccoli (including stems)
5 garlic cloves
1 box (32 ounces) vegetable broth divided
1 cup cashews
1/2 pound fresh spinach leaves
1/2 jalapeno, chopped (optional)
1 tsp liquid smoke
sea salt and pepper to taste (optional)
1Place the cashews in 1 1/2 cups of vegetable broth. Soak the cashews while you prep the rest of the soup.
2Place the broth, broccoli, spinach, garlic, jalapeno, salt, and pepper in a large stockpot over high heat.
3When the mixture begins to boil, turn down the heat and simmer for 20 minutes.
4Blend the cashews and soaking liquid into a smooth cream.
5Add the cashew cream to the soup and blend with an immersion blender.
