Cranberry Orange Waffles

Main Ingredients

3/4 cup coconut flour

6 room temp eggs, beaten

1/2 cup freshly squeezed orange juice (it took me 2 naval oranges)

1 zest of orange

1/2 cup room temperature maple syrup

1/4 cup melted coconut oil

1 tsp vanilla extract

1 tsp baking soda

1/4 tsp himalayan sea salt

pinch of cinnamon

1 cup cranberries

extra coconut oil for greasing waffle iron

Preparation

1To begin, remove eggs & maple syrup from fridge and allow them to come to room temperature, about 45 minutes to an hour prior to waffle making.

2Zest 1 orange and juice 2 oranges. Measure out 1/2 cup. If there's any left, drink up! Melt coconut oil, either in small saucepan over low heat, or via microwave in 15 second increments.

3In a large bowl, crack 6 eggs and whisk to combine. Add in maple syrup, vanilla, orange juice, orange zest, and coconut oil. Whisk until combined.

4Add in dry ingredients (coconut flour, baking soda, cinnamon, and salt). Whisk to combine. If too thick, add a touch more orange juice (about a tsp at a time). Allow batter to sit 5-10 minutes.

5Fold in cranberries. Preheat waffle iron. Grease iron if necessary.

6Follow your waffle maker's instructions for cooking. My waffle iron (it's a 2 square) allows 1/3 cup batter for each of my waffle squares.

7Cool on a wire rack, greasing iron in between waffles if necessary.

8Serve as desired. Enjoy!
