Cranberry Orange Protein Pancakes
Want to have your pancakes while keeping your health goals in check? These protein-packed pancakes are a fantastic way to start your day, plus would make for a most enjoyable post-workout snack. Topped with a bright cranberry-orange glaze, these pancakes will certainly help you get your day started off right!

1/4 cup fresh cranberries
1/4 cup orange juice or water
2 tablespoons coconut flour
2 tablespoons protein powder, either unflavored or vanilla would work
1 tablespoon almond milk
dash of cinnamon, orange zest, salt, and vanilla
1 teaspoon coconut oil, butter, or ghee
1In a small saucepan, heat cranberries over medium-low for about three minutes.
2Add orange juice or water and simmer for another five minutes or until cranberries begin to pop and liquid starts to thicken. Remove from heat and set aside until ready to serve.
3Meanwhile, make the pancake batter. Combine the remaining ingredients sans the oil in a small bowl, whisking until clumps are broken and batter is smooth. Let the batter sit for 3-5 minutes (I don't know why this helps, but it does!).
4In a medium skillet, melt coconut oil/butter/ghee over low heat. Pour batter into pan, making either 5 small, 3 medium, or 1 large pancake. As bubbles begin to form in the pancakes and sides begin to firm, flip the pancakes*. This usually takes about 5 minutes. Cook for another 3 minutes or until desired shade of golden brown is achieved.
5Pour cranberry orange glaze on top and devour immediately!
*I can usually tell they are ready to flip by shaking the pan back and forth. They are ready to flip if they aren't sticking and slide around. Nonstick pans are a GREAT choice for this recipe!
