Main Ingredients

200 g cashew nuts

180 g dates

50 g dried cranberries

1 teaspoon of coconut oil

Preparation

1In a food processor blitz the cashew nuts for about 15 seconds until they are all broken down.

2Add the dates a few at a time and blend well.

3Add 1 teaspoon of room temperature coconut oil and when blended add the cranberries and blend for about 10 seconds.

4Take small handfuls of the mixture and roll it between your hands to form small balls. I usually get 10 when I make this and each is about 1 1/2 inch in diameter.

5Refrigerate for 20 minutes to allow the coconut oil to set.

6Store in an airtight container in the fridge.
