Country Cream Gravy
This is the gravy recipe we serve with our Texas Steak, Texas Chicken & Chicken & Waffles.

1 pound butter
2 to 3 cups flour
1 gallon whole milk
1 quart heavy whipping cream
3 tablespoons salt
1 tablespoon coarse black pepper
1in a large pot melt butter on low heat.
2once butter is melted add flour and whisk until smooth.
3continue cooking on low heat for about 3 minutes..
4slowly mix in milk a little at a time, whisk constantly.
5add heavy cream and continue to whisk.
6turn heat to medium and add seasonings, whisk frequently, be sure the roux doesn´t settle at the bottom and burn.
7continue cooking and whisking until gravy is your desired consistency.
