Main Ingredients

6 eggs

16 ounces small curd cottage cheese

2 tablespoons maple syrup

2 tablespoons butter, melted

2 teaspoons vanilla

1 - 1/2 cups all purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt


1In a large bowl lightly beat eggs then stir in cottage cheese, maple syrup, melted butter, and vanilla. Mix well.

2Add in flour, baking powder, baking soda, and salt and stir until just combined.

3Heat a lightly greased skillet or griddle over medium heat. Using a 1/4 measuring cup, laddle batter into the skillet, one 1/4 scoop per pancake.

4Cook over medium for about 2 minutes. When the top begins to bubble, flip pancake over and cook another 2 minutes.

5Keep pancakes in a warm, 200 degree oven while making the remainder. Serve with maple syrup, butter, and berries.
