1 cobs corn (or can)
1 can black beans
1/8 cup olive oil (i prob used )
1/4 cup red onion
1 roma tomato
1/2 tsp chili powder
1Fry onion in olive oil 2-3 mins,
2Add corn, beans and jalapeno and continue to fry 1-2 mins.
3Remove from heat
4Transfer to bowl and add tomato, chili powder and squeeze of lemon.
5Stir gently to mix
6Let cool and refrigerate for at least 4 hrs
