Coconut Panna Cotta
This creamy, luscious, coconut rich dessert had a healthy makeover. A great make ahead dessert.

1 - 1/2 cup heavy cream
1 cup whole milk
1/2 cup lowfat milk
1/2 cup sugar
3 tsp gelatin
1 tsp coconut extract
2 tbsp flaked coconut
1/4 cup flaked coconut, reserved for toasting
1Combine cream, milks, sugar, extract and coconut in a heavy saucepan. Sprinkle gelatin over the top and allow to sit for a minute or two.
2Turn on heat, stir with a whisk until combined. Allow to sit over heat just until steam rises. Do not boil.
3Remove from heat and pour or ladle into ramekins or molds. Cool in refrigerator for approximately 1-1/2 hours before serving.

5Put flaked coconut in a saucepan. Heat over high heat. Move coconut frequently and toast for approximately 2-3 minutes.
