Coconut Lime Chia Pudding

Enjoy the flavors of summer any time of year with this pudding recipe that is so healthy, you could enjoy it for breakfast! It's as easy as pudding the ingredients in a mason jar, shaking them up, and letting the fridge do the rest of the work!

Main Ingredients

1/4 cup chia seeds

1/4 cup shredded coconut

3/4 cup coconut milk

1/4 cup coconut water

zest and juice of lime

1 teaspoon vanilla

1/4 teaspoon salt


1In a glass jar, combine all of the ingredients. Seal jar with top.

2Shake baby, shake.

3Let ingredients hang out in the fridge for 6 hours or overnight.

4Serve with coconut cream, berries, sliced bananas, pineapple, or crushed macadamia nuts.

Additional Notes

I love to layer my chia pudding into a parfait. It makes a gorgeous presentation that you could easily impress company with!
