Coconut Goji Berry Bites

These energy bites are gluten, dairy, nut and refined sugar-free! They also happen to be DELICIOUS! They are high in protein, thanks to the protein powder, include a healthy fat from the coconut and are high in antioxidants from the SuperFood Goji Berries! These bites are easy to make and are a great snack on the go, kids lunch boxes, post-workout, or when you’re craving something a little sweet!

Main Ingredients

2 cups unsweetened shredded coconut flakes

1/4 cup coconut oil

1/2 cup vanilla protein powder

1/2 cup goji berries

2 tbsp maple syrup

1 tsp vanilla extract

Preparation

1In a food processor, pulse the coconut flakes for 3-5 minutes until it reaches a thick, paste-like texture. Scrape the sides of the bowl to ensure it is thoroughly combined. Add the coconut oil, protein powder, goji berries, maple syrup and vanilla to the food processor and pulse again until combined.

2Using a rounded tablespoon, roll the “dough” into balls, pressing the mixture firmly so the balls are well formed. Place the balls in an air-tight container and refrigerate.

3Makes about 12 balls.
