Coconut Flour + Vanilla Pancakes W/ Maca

Firstly melt the coconut oil. While waiting for it to cool, beat the eggs, vanilla, honey, salt, and milk until light and fluffy. Main Ingredients

2 eggs

2 tablespoons of almond milk

2 tablespoons of honey

1/2 tablespoon vanilla extract

1/4 tsp of maca powder (this superfood powder provides us with incredible energy and helps promote hormone function in women)

2 tablespoons of coconut flour

1/4 tsp of baking soda

pinch of salt

3 tablespoons of coconut oil

Preparation

1Firstly melt the coconut oil. While waiting for it to cool, beat the eggs, vanilla, honey, salt, and milk until light and fluffy. Once ready, add in only 2 tablespoons the coconut oil, coconut flour, maca powder and baking soda and mix until all incorporated. Set aside. Heat the remaining 1 tbsp of coconut oil in a pan over medium heat. Place your egg ring on the pan, and scoop in 2-3 tablespoons of batter (depending on the desired pancake thickness) into your egg ring and cook until bubbles form. Flip and cook for another 1-2 min. I topped mine off with some peanut butter and roasted cacao!
