Main Ingredients

1 cup butter

2/3 cup brown sugar

1/3 cup granulated sugar

1 egg

1 1/2 tsp vanilla

2 1/2 cups all-purpose flour

1/2 tsp baking powder

1 tsp baking soda

1/2 tsp cinnamon

1 tsp salt

1 cup dates, chopped

1 cup walnut, chopped

1 cup sweetened coconut flakes + more for rolling the dough in


1Preheat the oven to 350°F and line three baking sheets with parchment paper.

2In the bowl of an electric mixer, cream the butter until creamy. Add in the sugars and mix until combined. Mix in the egg followed by the vanilla.

3On top of the dry ingredients, place the flour, baking powder, baking soda, cinnamon, and salt. Mix until well combined. Fold in the dates, walnuts, and coconut flakes.

4Roll a few tablespoons of dough into a ball and roll in the extra coconut flakes. Place on the prepared baking sheets and repeat until all of the dough is used. Bake for 8-10 minutes or until cookies are golden. Cool on a wire cooling rack. Makes 2 dozen cookies.
