Main Ingredients

2 cups macadamia nuts

1 cup almonds

1 heaping cup shredded, unsweetened coconut

1 cup softened dates *

1/2 cup unflavored collagen, egg white, or other protein powder

1/2 cup dark chocolate chunks or chips

Preparation

1Pulse macadamia nuts and almonds in the food processor until fine and crumb-like. Add coconut, dates, and protein powder, pulsing until well combined and a dough-like consistency has formed. Gently fold in the chocolate chunks with your hands or on a gentle pulse.

2Press the mixture into a parchment-lined loaf or baking pan and refrigerate for 2-4 hours. Slice into bars or squares and refrigerate in an airtight container for 3 weeks or freeze for 3 months.

Additional Notes

*To soften dates, let them sit in warm to hot water for 5-10 minutes.
