Coconut Almond Waffles
Delicate waffle with a subtle caramel flavor!

1/4 cup coconut flour
1/4 cup chickpea flour
1/3 cup almond butter
2 eggs, beaten
1 1/4 cups canned coconut milk
1 tsp vanilla extract
3 tbsp coconut sugar
1 tsp baking powder
pinch sea salt
pinch of cinnamon
pinch of cloves
1In a large bowl, combine eggs, vanilla, coconut milk, and almond butter.
2Then add chickpea flour, coconut flour, coconut sugar, cinnamon, cloves, salt, and baking powder. Whisk to combine.
3Set batter bowl aside for 10 minutes.
4While waiting, preheat your waffle iron. Grease waffle iron if necessary.
5After 10 minutes, pour batter into your iron (I used 1/3 cup for my waffle iron) and cook per your waffle iron's instructions. Cool on a wire rack. Serve as you desire.
Err on the side of cooking these waffles a bit longer than you normally do. These are delicate waffles so need extra time bathing in the iron to set up. Adapted from TheBeautifulBalance.com and her Coconut Flour Waffles I served with shredded coconut, almond butter, and pitted dates.
