Cocoa Date Bites

1 cup of pitted dates (soaked and drained if they are a little dried out)
1 cup of raw nuts (i used raw pecans, raw walnuts, and toasted hazelnuts-you can use raw hazelnuts, but i find they tasted better toasted in this recipe)
3 tablespoons cocoa powder
1 teaspoon vanilla extract or paste
pinch of salt
1 - 2 tablespoons nondairy milk
optional: extra cocoa powder or finely shredded coconut for toppings
1Start by placing the nuts in the work bowl of a food processor, and pulsing them until they are broken down and chopped. Be careful not to overprocess the nuts because they will turn into a flour.
2Once the nuts are finely chopped, add the dates, cocoa powder, vanilla, and salt to the work bowl of the food processor with the chopped nuts.
3Pulse the mixture a few times to break up the dates. Then let the food processor run until all of the dates are broken down, and the mixture is fully incorporated. Depending on your food processor, it will take about 1-3 minutes.
4The mixture should hold its shape when pressed/squeezed together. If you find that the mixture is a little dry or crumbles, add a little bit of milk at a time and pulse the mixture to incorporate the liquid. Test it again to see if it holds together when squeezed.
5Use either a small cookie scoop or a small spoon to portion out the mixture onto a piece of parchment paper. Once it is portioned, roll each piece in your hands to create a ball.
6Place them in an airtight container and into the fridge for a few hours to firm up.
7Once they are firm, you can roll them in finely shredded coconut or extra cocoa powder as you would a chocolate truffle.
This recipe can be customized to different flavors! Try adding a little orange zest and juice instead of milk for a chocolate orange combo. Or you can even pulse a few pieces of dried fruit, like dried cranberries, in the final step to give it a holiday flavor (or if you like to eat cranberries year-round like me!).
