Cocoa Cashew No Bake Energy Bites

Combine cashews, oats, honey, collagen/cacao in a food processor until it's pretty evenly mixed. Melt the coconut oil with the chocolate bar in a microwave safe dish or on stovetop. I microwaved for 1 minute, then break up chocolate a bit/stir then keep going for 30 seconds at a time. Add the melted chocolate to the food processor and blend again. Main Ingredients

2 cups cashews, soaked for at least 2 hours in water then drained

3/4 cups rolled oats

3 tbsp raw honey

6 tbsp of chocolate collagen (i used ancient nutrition brand) or if you just have regular collagen do 4 tbsp then add 2 tbsp cacao powder (just do cacao powder for vegan version)

2 tbsp melted coconut oil

30 grams of dark chocolate, this is about half your average sized bar, doesn't have to be exact you can use a bit more or less. i used thera treats

Preparation

1Combine cashews, oats, honey, collagen/cacao in a food processor until it's pretty evenly mixed.

2Melt the coconut oil with the chocolate bar in a microwave safe dish or on stovetop. I microwaved for 1 minute, then break up chocolate a bit/stir then keep going for 30 seconds at a time.

3Add the melted chocolate to the food processor and blend again.

4Once mixture is well combined, roll into tablespoon sized balls on a baking sheet or plate. It makes about 20-24 balls. Place in the freezer to set for 30 minutes.

5Store in the refrigerator or freezer.
