Cinnamon Cassava Muffins

Preheat oven to 350. Mix all ingredients through berries/chips/nuts until well combined. Fold in "mix ins" if using. Scoop about 1/3 cup batter into 12 parchment lined muffin tins (even amount in each tin, not sure if it is exactly 1/3 cup). Bake for 20-22 minutes until a toothpick comes out clean.

1.5 cups cassava flour

6 eggs

2/3 cups unsweetened apple sauce

1/3 cup liquid sweetener (honey or maple syrup) or can just do extra apple sauce for lower sugar version

2 tsp cinnamon

2 tsp vanilla extract

1 tsp baking powder

5 tbsp melted ghee or coconut oil

pinch of sea salt

optional: berries, chocolate chips, nuts for mixing in

Additional Notes

Best when eaten warm out of the oven or reheated in toaster oven. Store in fridge for up to 7 days or freezer for months.
